- Prepare 1 can of light coconut milk (like Goya brand).
- It's 2 tbsp of red chili paste (or more to taste).
- It's 3 tbsp of Smart Balance oil or good olive oil.
- It's 1 each of red, yelliow & green peppers sliced.

- 1) Heat oil in large pan..
- 2) wash chicken breasts and pat dry. lightly salt & pepper with coarse s&p.
- 3) brown chicken on both sides and remove to plate..
- 4) Add the sliced peppers and chopped onions into same pan and stir fry until translucent..
- 5) Meanwhile, cut up the browned chicken breasts into bite-sized pieces..
- 6) in a saucepan, pour the can of light coconut milk into pan wit 2-3 Tablespoons of red chili paste or more to taste. heat on low. Stir well..
- 7) Add bite sized chicken bites to pepper and onion mixture. Pour the light coconut mixture over the chicken. Mix well.Turn to low and cover for about 10-15 min so all the flavors mix well together..
